1. Recibir y organizar a su personal en el montaje y limpieza del punto de venta.
2. Hacer su pedido de alimentos y bebidas.
3. Verificar especiales del día con el chef.
4. Dar el ?briefing? informativo a su brigada comentando los puntos trascendentes del día.
5. Trabajar un tema de capacitación del día (Cocteleria, Estándares).
6. Supervisar el servicio del día y comentar con huéspedes opiniones acerca del mismo.
7. Recoger, limpiar y cerrar propiamente el centro de consumo dejándolo listo para el día siguiente.
